1st visit: met my husband & his colleague (that had traveled here from NYC) for dinner. Great service, good food & the atmosphere was very appealing. We'll be back!

We spent our anniversary dinner at saltbrush and we absolutely loved it. Our server Madeline was one of the best servers we have had and the chefs made the yummiest food. jared Huber is an outstanding chef and he was so kind. Our favorite was the pork chop with polenta. Delicious!

Having followed the progress of Saltbush closely, I was eagerly anticipating my dining experience, and I must say, it blew me away! We dined with a group of 6 and it was impeccable from start to finish. From the moment we stepped in, the ambiance captivated us with its elegant yet cozy atmosphere. The staff was incredibly attentive and friendly, making us feel welcomed from the start. Now, onto the food - it was simply delicious! The duck fat potato (which is what I knew for weeks I would be ordering first) was insane. I could have had two of those for my main course and been happy but also glad I didn't because the rest of our meal was impeccable. We tried a good portion of the menu, opting to share plates, and what stood out to me were the Half Roasted Chicken, Asparagus and Beet Agnolotti. All we're to die for. And don't even get me started on the desserts - pure indulgence! Overall, Saltbush exceeded all expectations. It's sure to be a gem in Boise, and my anticipation was well worth it. I can't wait to return for another memorable dining experience. Highly recommended for anyone seeking exceptional food and impeccable service!

Food was excellent, even for a couple of people who don’t like to dip our toes into new avenues. We spent parts of the day reviewing the menu because it is out of our comfort zone; and we wanted to know what to expect. We landed on the sourdough bread starter which was great! Very fresh and well done. Small plates we chose the pork cabbage rolls- which we weren’t too sure about but again, stepping out of our comfort zone. And personally they are one of my favorite choices from tonight. We also had the asparagus which was great, but definitely a more safe choice. I had the lamb and LOVED it! I am not one to veer away from chicken or steak but I really did enjoy this dish. My husband had the steak and really liked it as well. He’s not a fan of NY strip but said it was pretty good. Overall my husband and I had a really good experience. Staff was so organized and communicative, food was delicious, atmosphere was classy and relaxing. A good place to try if you’re looking for something new! (Nearby parking at Hotel2 I believe)

I dined with a group of friends on a Tuesday evening and had a lovely time. We decided to order a variety of plates to share and every dish was well executed and delicious! My favorites of the small plates were the asparagus, beet agnolotti, and the DIVINE duckfat potatoes. The NY Strip and half chicken large plates were exactly that— large and satisfying. Seasoning and cooking temperatures were on point for both. We finished the meal with a rosemary cake and affogato, both very balanced and satisfying. We also shared a few bottles of wine throughout the evening (recommendations of the owner)—unfortunately can’t remember the names, but they were delicious! Our lovely server, Hailey, was very professional and knowledgeable about all the dishes. She and her assistants were very attentive with filling waters and resetting and crumbing between courses. I don’t remember having to ask for anything all night— they anticipated everything. Neil, the owner, was also very kind to check on us throughout the evening. Finally, the atmosphere of the restaurant is delightful. The design feels very elegant, but not stuffy or sterile. A lot of attention was paid to every detail, from the wallpaper down to the plates and napkins— nothing felt like an afterthought. We will definitely be back soon! Would highly recommend for anything from a business meeting to a romantic date night. Hoorah!

We ended up waiting over 45 minutes to get our first appetizer. I do understand it was their second day open so I'm sure it will improve but charcuterie or the salad should not have taken that long with nothing needing to be cooked. The steak main was very good although the mashed potato puree with it was lacking. The chocolate cake was on the dry side Overall would like to give it another chance in the future once everything is ironed out. The staff were friendly and the ambiance was very nice. Updating with our second visit: Went back to give it another shot and noticed some very good improvements The specials we had were the bone marrow appetizer and brown butter ice cream dessert. They were executed extremely well. The pork chop we shared as a main was also excellent. The only thing lacking was the sourdough bread. Ambiance is still excellent although a little loud. Service was good but the manager is amazing. They really made us feel welcomed and special. Water was rarely empty and the only improvement would be for the food to come out faster. We did go on a Saturday night so it may be better when they're not as busy.
